Place your kit on a plate in your home that gets indirect sun. Do not remove the plastic bag. Cut where the black "X" is (for the blue oysters) and cut on the black "diagonal" line (for the pink oysters) on the plastic bag. Mist the outside of the kit where the cut was made with fresh water at least 3-4 times a day. Keep your mushrooms moist but do not soak them.

Harvesting

Mushrooms can mature in 7-9 days. Pick or cut off entire clusters.

Store your mushrooms in the paper bag that comes with the kit in the refrigerator

These mushrooms will be a great enhancement to any dish calling for mushrooms. They have a rich earthly flavor that is clean and savory. Use it all the same ways you use a white button without that slimy texture. We like to say if the sirloin is the white button the filet mignon is the blue oyster, much better flavor, much better texture.
